This issue contains selected papers from XVIII International Seminar on Health, Food and Human Nutrition. Topic areas discussed in this collection’s 29 papers range from the implications of epigenetics and the risk factors and treatment of a variety of health conditions, to the intricacies of the microbiome, with a focus on pregnant women and their babies.
ESPOCH Congresses: The Ecuadorian Journal of S.T.E.A.M. is a new Open Access journal, established by Escuela Superior Politécnica de Chimborazo (ESPOCH) in 2021 to collect and showcase groundbreaking research in Science, Technology, Engineering, Arts and Mathematics (S.T.E.A.M.) disciplines produced by Ecuadorian researchers. The journal contains a series of special issues, each based around one of ESPOCH’s annual conferences and comprised of original research articles derived from papers presented at the event.
